easy first-day dinner

I like to cook up chili and freeze enough for two people in a bag. The block goes in the food barrel and slowly thaws over the course of the day ready to heat up once I'm ready to make dinner. Added benefit, it keeps everything else in the food barrel cool that first day.
 
I do something similar, I place a frozen steak in a zip lock bag, then wrap it good in newspaper and place it in the bottom of my Duluth pack surrounded by bulky items (clothes bag, sleeping pad etc.). If it’s not predicted to be too hot on the trip, I’ll do the same with a few sausages or kielbasa for the second night.
I keep the frozen food in a cooler on the trip to my put in, works every time…and I have some easy fire starter or reading material while my steak cooks over the campfire.

Slightly OT, but occasionally I will use various sizes of the bags from box wine filled wit water and frozen to keep fresh food cool on trips. As a bonus you can drink the water for a cool drink and use the water as the trip progresses. With a bit of care the valve on wine bags can be easily removed. I have a number of bags I have used many times.
 
Maybe too easy for the topic, but one time making a late start on the Moose River bow trip we picked up a large pizza from Bishop's store in Jackman, ME. We took care to keep the pizza box dry since we knew we'd need to burn it before the portage the next day. Pizza on a beachy campsite under the stars with a popping fire, it was perfect.
 
Interesting topic. Kathleen and I like easy dinners, whether it’s day 1 or day 15. No difference between the two. But if day 15 was rainy, long, windy, and with stressful paddling conditions, then an easy dinner is very welcome, even more so compared to an easy day 1. Kathleen dehydrates all of our dinners. All can be ready in 30 minutes, in one pot, including preparation and wash up. Then time to relax with a thermos of tea.
 
I always liked the idea of taking KFC for the first night but never did because I have a tendency to use my pants as a napkin and thought it was a bad idea in grizzly country. So on an Everglades trip we picked up a bucket of chicken. We were hungry by the time we got to a campsite and myself and our friend Tracy started to eat some chicken while my wife wanted to get setup first. After eating a couple pieces we started helping my wife get camp set up. Unfortunately while the chicken was unguarded it got eaten by some hungry vultures and my wife never got any.
 
Along the same lines for us. Since we are generally only out for a 2-3 days. I'll cook up two dinners and 2 breakfast and vacuum seal them, then freeze them. They'll get stored in a small soft sided cooler and heated up when we get to camp. We'll have what I call taco soup or beef stroganoff, fajitas.... something along those lines. Scrambled eggs and sausage and tortillas for breakfast.
 
A typical evening meal on a solo. When I go with a partner or group someone else does meal planning.

I take MREs that I buy from the Commissary on base. All I need to do is heat water.
