So the question is, does anyone (else) prefit their inner gunnels along with their decks and then put them together in a football shape and then fit them in the canoe and install them right along with the outer gunnels?
I'll post more pics of the process as I work on this later in the week.

Years ago,I watched two guys at the Zimmerman, Mn. Bell factory do it that way.
Went pretty fast.
That works best in a production shop, where you are working a lot of the same canoes, out of a mold .
Me ? I dry fit my decks, then the inwhales, using screws. Remove and apply thickened epoxy, and reattach. Yeah takes longer ! But no screws showing, no holes to plug, plus my gunnels are permanently sealed. Takes a lot longer, but worth it to me.
After the epoxy has set a few days, I glue on the outwhale, capping the hull.
