how wide for strips

building a freedom 17 strong back and stations are done. Have been looking for northern white cedar, Found a bunch of it, Its 1 1/16" thick
5 1/2" wide. Can I use 1" wide strips on the flatter sides of the canoe then I can plane boards to 3/4" for the curved part maybe go back to 1"
on the bottom? Its my first build.

As long as the strips can match the hull curves my say is yes. I have done it in the past. One boat I went so far as to taper wide strips on both ends then did the bead and cove. It was a Guideboat and not a canoe but in the end I only had to hand fit four little gore pieces. It works great and the boat looked awesome with the tapered planks. Do whatever you need to to cover the forms.

Neat, Lyle - my Freedom 17 plans arrived last week. I was hoping to start tracing the forms tomorrow.

I split the difference and did 7/8" on my first build, but I beveled my strips - no bead and cove.
 
use as wide a strip as you want, Walter Dean, inventor of the Sunnyside Cruiser used planks up to 4" wide on some of his boats.
look up "wideboard" canoes
