Reflector Oven “Fauxcaccia“

This is a bread recipe I found in a camping book that I have slightly modified. Requires no kneading. You end up with a free-form loaf that, when sliced, looks and tastes a lot like focaccia so I am calling it Fauxcaccia. Mix the dry ingredients (other than yeast in advance) to make it easier.

In large bowl combine 1&1/2 cups all purpose flour and 1&1/2 cups bread flour (can use 3 cups all purpose if you don’t have bread flour), 2 teaspoons sugar, 1 teaspoon salt and one package instant yeast. Add between 1&1/2 to 2 cups hot (not boiling) water and stir until you have a big sticky mess. Cover and let rise, preferably in a warm spot, for at least an hour. An hour and a half is even better. Grease a baking sheet, hold the bowl just above it and invert, shake until the dough falls out and goes “splat” on the baking sheet. Bake in reflector oven until it starts to brown.

This recipe is plenty for 4 to 6

Above recipe also can be used unmodified for pizza dough. Simply add pizza sauce, mozzarella cheese & toppings of choice.

For garlic/rosemary bread, sprinkle half the desired amount of garlic and rosemary over the top of the dough before letting it rise; after inverting dough onto baking sheet, sprinkle remaining garlic and rosemary on the "new" top before baking.

Karen and I were hoping to try this last weekend on a 4 day trip to the Upper Bog River and Low's Lake in the Adirondacks. Time constraints and cold temperatures conspired against us. Next trip!
 
This bread recipe is quickly becoming my go to bread recipe at home because it is so easy. Last night I also experimented using it as a pizza crust. Just followed the above directions. After a few minutes of baking, I added the pizza sauce, mozzarella cheese and pepperoni. It worked quite well!
 
It's that time of year and I'm looking for an excuse to turn on the oven !

Tried it with garlic and rosemary tonight and it was great! Added instructions to above recipe.
 
Liven good. A canoe trip is a great chance to do some real cooking. I like a Dutch Oven best.
We take turns cooking dinner. It often turns into a contest to see who can make the best food.
 
Made a loaf this past weekend....pretty good!

Karen did a trial run today at home with the garlic/rosemary additions. It was fantastic! We're looking forward to baking it when tripping in our reflector oven. Thank You!
 
Glad you liked it! This is a favorite now and I make it at home frequently. Easy-peasy fresh bread with under 10 minutes of active "work."
 
Just back from our first trip of the season, to Cranberry Lake in the ADK's. Fauxcaccia was a home run! Karen has capably baked all of our bread for 40 years and this was as good as any! What a treat to have fresh, risen bread on a canoe trip. Thanks alsg!

Looks like heck, tastes like heaven. And easy! Started making it on trips but I now make at home whenever we have pasta.
 
Life's simple pleasures. The longer the trip the more you need to be able to bake somethin.
I like bannock, and like to make cobblers and quick breads in a DO. Reflector ovens are as old as the hills. New ones cost a lot, but I have never made one.
