I do similar, I wrap in plastic (or vacuum seal), then a couple of layers of wet newsprint, and finally a couple of layers of foil, the whole mess then gets chucked in the freezer for a couple of days, on the morning of the trip it goes in an oversized ziploc and buried in the middle of the barrels with other foods that need to keep cold. Unless it's a crazy heat wave, by dinner of day 2 (or 3 if the weather is cool) it's generally almost fully thawed but ice cold, with a little in the middle still frozen. I unwrap the whole thing, toss the paper in the fire, open up the plastic which then goes in the same ziploc, and the layers of of foil wrap my potato for baking and the steak. All the foil after cooking is wiped off to remove any juices and the cooked steak goes on the grill for a couple of minutes to brown, any garbage from dinner or throughout the day is added to the ziploc to be carried out
