Hummus

Here's an easy one

1 can of chick peas half the liquid reserved
1/4 cup olive oil
Juice from 1 lemon or 1/4 cup of Realemon
1 tsp salt
3 tbps Tahini (or peanut butter if you can't find Tahini in the store)
3 cloves of garlic

Put the olive oil, lemon and tahini in food processor and mix well
Add salt, garlic and chick peas and continue to process. Mix it well for a smoother texture.

Spread on dehydrator trays and run on med high for 4 hours or until it is dry enough to become powdery.
 
Doesn't the olive oil make it prone to becoming rancid? I do make my own hummus at home as the ready made in the store is so overpriced.
 
Look for hummus in powder form by Fantastic Foods, usually found in the organic food section of most supermarkets. It's not very expensive. Bring along a tiny nalgene bottle of olive oil to reconstitute it with water. I like to mix it with a pouch of tuna, makes a really good tuna spread for a tortilla wrap.

I'm sure you could do the same with dehydrated home made hummus, just leave out the oil until ready to mix and eat.
