Easy Duck Doings

Went duck hunting in Pamlico Sound, NC last week and shot a bunch of redheads. I've found a lot of people hesitate when it comes to cooking or eating duck around here. That said, here is an easy recipe that's hard to screw up:

1) breast out the bird with or without skin
2) Cut slits in the breast and put thin slices of fresh ginger root and minced garlic in the slits.

3) dust liberally with sea salt and black pepper. I also sometime add ground coriander or dredge in flour.
4) Pan fry in olive oil of butter. Medium high heat and make sure to cook medium rare for best taste.

Got any good recipes for Canadian Goose ?
They Invade the neighborhood at my shop.. I'm just on the other side of the Gray house

Fairly similar meat. Just breast out a goose the way you would a pheasant and try the recipe above. You will only need a bit of garlic and a piece of ginger the size of your thumb. I use a vegetable peeler to take the skin off the ginger and to make "shavings" of ginger, then slice them thin with a paring knife before insertint them into the slits in the breast.
