Favo(u)rite Pastries While Wilderness Canoeing

Lifelong consumer of Hersey bars. Nobody but me eats peanut butter in our house so the entire Jif jar is mine. I bust up segments of Hersey's and throw them right in the jar. However, for trips I just bring one little Halloween sized bar for desert each nite. I only trip during shoulder season so no melting issues to deal with.

For a number of years my main paddling partner would bring his homemade reflector oven and make birthday cakes for whoever had a nearby birthday. They were commercial cake mixes but sure tasted good around the campfire.

my dump cakes use the commercial mixes that don't need eggs and are stupid easy...
all you do is grease the dutch oven with shortening or ghee, dump in a couple of cups of rehydrated fruit with the liquid and some sugar (couple of teaspoons) to make a syrup, dump the dry mix on top, add whatever else the mix requires except water, make a donut- shaped well and dump in a can of your favourite soft drink- I use sprite for white or golden cake and coke for chocolate, bake on slow heat, until your knife blade comes out clean, garnish with your favourite topping and eat, a huge favourite is my black forest clone- a couple of cups of rehydrated cherries, a fudge cake mix, a can of coke, and after baking throw on the shavings from a bar of dark chocolate, a few extra cherries, and add a layer of whipped cream from one of those non-refrigerated cans before serving.
it's not the lightest thing to carry but neither is the dutch oven, but the biggest problem is that it never seems to make quite enough no matter the size of the crowd...

Thanks much for the recipe. I don’t do anything regarding food prep at home or in the bush. But since I am increasingly base camping I need to liven up my mundane diet while camping. And I have a Lodge dutch oven that is mostly unused.

I bring some version of homemade trail mix. This year it was pecans, M&Ms, dried cranberries and coconut flakes. It hangs out in the day bag for dipping into as needed. I put mini chocolate bars in with dinners as dessert. I make pancakes instead of bannock. Whole wheat flour, powered milk, powdered eggs, a bit of salt and baking powder, I also bring butter and granulated maple syrup.
