Headed to TN with the new beater. Installed some yak pedals. Buyt on heads. I’m also attaching a photo of my repurposed solo yoke. Not the lightest thing. But rock solid.

I've never felt the need to use any more than two screws to secure each foot peg track to the hull, don't recall any yak, pack boat or canoe manufacturer to use three screws either. Seems that nut would catch on things, maybe turn it around to the inside?
Large head pop rivets would be a low profile option. I've used regular pop rivets for 40+ years, and they've held up nicely.
