With my current physical condition, Im not able to load, unload her kayak. As a bonus, we can take both dingoes (although it’s a pain since they both want to ride with me).

I mentioned to my wife about possibly moving to a canoe last weekend and you would have thought I told her I was going to sell our grandson. LOL I'm sure she's down to paddle a tandem, but she's not gonna give up that kayak easily for solo stuff.
Just tell her it's a sit inside open deck kayak.
I wish it was that easy. I'm probably going to have to swap with her for a while and let her try it out, she may go for it then but no promises. She's paddled that yak all over Louisiana and Texas, it's got a lot of fond memories attached to it. I'm honestly not going to push it, she definitely DID NOT like the fact this past weekend, that I could just walk away in my canoe. 
She's really competitive, I'm just gonna stay quiet and let it be her idea. 
Maybe you just need to buy her a pack canoe, such as this:

Then you could use it when she doesn't come along....or buy one for yourself.

That’s exactly what I did Alan. I bought one for me and after she tried it there was no going back to the kayak.
