Stacked enchiladas in a Dutch Oven

Last night I made one of my favorite river trip meals. It seemed hot out side so I did not build a fire. Instead I used a cast iron DO in the overn.
Layers of ripped corn tortillas, shredded chicken, black olives, chopped onions and bell peppers, and mild green chilies. Add some garlic and cumino. A lot of people like shredded cheese. Cilantro if you have it to garnish.

Chicken is good even canned chicken on a week long trip. I have used buffalo and elk meat and antelope. Beef works fine.
This is real food and it does not last long. On a river somewhere you can leave out half the ingredients and people will still demolish it.
