I think aluminum is best if you own the waterfront, no portages, and you just pull it out and flip it. Right where you need it next time. (I have that land and would like an aluminium canoe to leave there.)
I find the Souris River Tranquility to be stable and rugged for a Kevlar canoe and more than enough capacity for me at near 250 when I bought it and another 100+ pounds of gear. High initial stability as well.
I think all these different practices and preferences are wonderful. I'm a foodie so while breakfast and lunches are usually no cook dead simple, some dinners do get more complex. Not a fisherperson so rarely have that wonderful option.

Eclipse craziness has taken hold here in totality lane. All the seasonal restaurants and stores are opening ahead of usual. Village is filled with cars. They should of put up the parking meters rather than wait till Memorial Day as usual.
I will only add I've had no trouble cartoppingbon my 2018 Outback. Hood loops anchored with a screw that was there. Thule bars - a 56" and a 76" set for carrying two. And for long distances I tie the stern to the tow hitch - the loop where the safety chain attached.
Surprisinfly, the bow ties...
If you're coming to the Adirondacks, you might want to bring some extra gasoline.
