I have always tried to hang my seats low.
To me if they were too low ? All I needed, was to add a seat cushion. A Simple solution, to raise the seat..

I too use staples. There are those that don't.
When I staple ? The stapler is held in the horizontal position, Your method, would allow either horizontal, or vertical stapler position.

Manufacturing, a straight sided hull, is much easier, than a tumblehomed hull.
Wenonah saw little reason, to stray away from the Jensen designs. As they have proven over the years.
I SLIGHTLY bevel the edges, of the forms, where the strip contacts the form. This eliminates an unsightly dent on the inside, that requires extra sanding on the inside of the hull.
Extra layers of tape, on the forms, will help also.

My method for caring my paddles on a portage.
The bent blades wedge. This works, but a bungee cord strap at the thwart and handle works better.
Place the thwart about 26" fore, of the seat.

I found that when I glassed one side at a time ? There was a dry line, running down the keel. One side wetted out, the other side dry.

I use Watco, and give my gunnels a heavy coat.

If the glassing was done recently, (within a year ? ) Patches will blend in.
Me ? I'd patch. adding a layer would add significant weight, without much benefit.
I prefer to scrape first, then sand.
The patches may look ugly, but after you sand, and varnish ? You won't see them.

Yeah, a non tumblehomed hull, with non recurved stems ? You can get away with it.
That was the fear, I had. So glassed the ends, of mine, off the mold.
I eyeballed for plumb, clamped and glassed the inside first. Kevlar made it tougher the shape the ends
