Stripperguy, I have used templates like this for building pieces of furniture in the past. Quite helpful for determining odd radi, or matching something existing. So, I guess I'm not quite a linear thinker. More outside the box :)

Alan, your pictures look like the finish is still glossy. Have you sanded the epoxy yet? Or are you waiting to sand and varnish all in one fail swoop? If you can stand it, I would certainly try to wait to get it into the water until everything is done. I'm like you...if i got it into the water...

You could try a curve template similar to this one at 12" "stations" much like you would need to set up forms. http://www.trick-tools.com/37_inch_Curve_Template_148455_363#.U9WIBvldV8E You could do this on the inside of the canoe so it would match the new forms. Maybe 1/2 the canoe at a time...

What about taking some 1/2" x 1/2" hardwood stock and ripping out the corner to sit on top of the cedar edge for inwales only? You could put a small round over on the outside corner just to ease the edge, and to act as a rub surface. Depending on the material chosen, it will probably wear a lot...
