Home Made Spam

It looks like a LOT of work and a LOT of Spam..all at one time.. what to do with it.. Usually any Boston Butt that enters our house is quickly brined and smoked. Maybe we should save a small part of the next piece and get a ham. Where are the spices however?

Would pink preserving salt work.. I have a lot of it.. for bacon.

I don't recall seeing our meat grinder for years.. and years...
